MENU: December 16, 2011 (Kristie)
Run! Run! Run! There is no time to eat in the days leading up to Hanukkah and Christmas. The week's meals are fast or marinate in advance for a quick meal prep. I have included the best recipe for home made fajitas we have ever had. If you were at my kids "Fiesta" birthday party this summer, you got a taste of them. These can also be made with steak, but I prefer to grill those outside in the warmer months. During this time, we also have a "freebie" night nearly every week because there is almost certainly a last minute item on the to-do list. That's when everyone gets to eat what they want - within reason. So go get dinner out of the way and move onto more important things...like all those parties!This week's meals in no particular order:
- Baja stir-fry pork
- Pressed Cubano sandwiches
- Spinach ricotta quiche
- Chicken fajitas
- Ham & cheese strombolis
- Fusilli pasta with caramelized onions and white wine
I had chicken fajitas on the menu for next week, but will switch to your recipe instead! I'm also going to try the Spinach Ricotta Quiche.
