MENU: October 28, 2011 (Karen)
This week the weather is cold and comfort food is on the menu. I just realized that we had pot roast sandwiches about 5 weeks ago and I have them back on the menu. It's a different recipe and the family just loves a hearty meal. The nice thing about the recipe this week is that it makes two meals. One meal I serve with rice or mashed potatoes as a hearty meal. Then later in the week I use the vegetables and meat to make sandwiches with melted cheese and place them under the broiler to melt. I've also included a new recipe I adapted for Pumpkin French Toast. Who doesn't love breakfast for dinner? No really, who? The family loves all things pumpkin so what a great way to kick off the fall weather with this yummy pumpkin treasure.
