MENU: April 20, 2012 (Karen)
I get a lot of cooking magazines! I enjoy them all and then I rip particular recipes out to add to my own recipe books I have created. (Very Martha Stewart crafty girl that I am) And it pains me to see some wonderful recipes that I would love to cook. Shrimp this or Eggplant that. But alas, my family wouldn't stand for it. So I longingly turn the page and look for more appropriate recipes to add to my collection.
My family is by no means picky there are only a handful of items that they would not like. But what I like is that my boys will try anything. Yes even mushrooms and green pepper. I tell them all the time - things take on the flavor of what their paired and cooked with. This theory has been tested many times by them and usually it is followed with a shrug of the shoulders a bit of a nibble, a smile, a smirk and a "not bad" reply. :) Now, if only I could hide the shrimp and eggplant from my husband. But he's too clever for tricks! CURSES....
This week I've made some new recipes that were a hit and some good old standards we always have. The Baked Ravioli is a favorite - think Lasagna without the work. My favorite Cheese Ravioli is Caputo's brand. It is fantastic. The cheese holds up it's not creamy like some some frozen raviolis you find. There is texture and bite to it. AND oh such a fast and good meal. Truly a wonderful inexpensive meal. Make sure you try it out!

- Chicken, Spinach and Noodle Casserole
- Italian Meatball Sliders
- Chicken with Lemon-Leek Linguini
- Beef Pot Pie Wedges (REPEAT)
